
Guest Room at the Tait House in Shediac, New Brunswick (Canada).
I slowly opened my eyes to see the grand chandelier in the ceiling. My four-poster bed was lightly closed-in with sheer curtains. I waited for my lady-in-waiting to come in before remembering that it was the year 2009 and I was staying at the Maison Tait hotel in Shediac, NB.
It was easy to step back in time in this 1911 house that was home to R. Chelsea Tait and his family. Original glass around the front door and solid wood throughout added to the old world elegance.
The dining blasts the hotel back into the present, though. Contemporary artwork covers the walls and eccentric chandeliers hang from the ceiling. I ordered a halibut dim sum dish (I’m not sure where the dim sum part was) that was light and fresh. Kim, my newfound New Brunswick friend, had a salmon dish that she kept moaning about with delirium (the bite of salmon I tried was perfectly cooked).
Dessert time was ridiculously divine. I dug into my favourite crème brulée. It had a hint of amaretto and anise in it, with a silky texture that made me drool. Kim went with the chocolate molten lava cake that was so smooth it could have taken me home that night.

What I Liked:
- Each room at the Tait House has its own unique charm. #1 (where I stayed) has a four-poster bed with sheer curtains around it, while #9 (where Kim stayed) has a cathedral ceiling of dark wood.
- All rooms have free wireless, always a nice touch.
- The rooms were recently renovated (and made larger), so the interiors are new without losing any of the 1911 feel.
- Dining here is not easy on the wallet but it’s definitely worth it for special occasions.
